AFTER HIS SUCCESFUL STINT AT Dr. Stravinsky in Barcelona (included in the World's 50 Best Bars from 2019-2021) and Saddle in Madrid (Best Restaurant Cocktail Bar in Spain at FIBAR 2020), Alberto Fernández is launching his first personal project with Emilio Rodríguez in the heart of Madrid: Momus Cocktail Bar.
Unlike other bars in the area, here Fernández and his team only serve cocktails, with no beer or soft drinks to be found. Their drinks are singular takes on the classics, with irony as the main protagonist: they’re an ode to Momus, a god from Greek mythology and is the embodiment of sarcasm and Carnival in all its forms.
Their version of the Kingston Negroni, itself a version of the Negroni, was picked as the best cocktail in Madrid at the Time Out Awards.
Devil's Cut is the first European project –and one of his biggest– of cocktail icon Shingo Gokan, recently considered one of the most influential people in the industry globally (#7 in the Bar World 100, Drinks International's annual barometer). He now runs twelve bars in such relevant cities as Tokyo, Shanghai and New York.
At Devil's Cut, Japan and Spain not only meet through cocktails and a careful selection of wines, but also through the food menu. Together with Gokan, chef Atsushi Furukawa (The SG Tavern, Tokyo), reinterpret Japanese cuisine by introducing Spanish ingredients, bringing a unique personality to the Izakaya small bites at the top of the menu.
AFTER THE SUCCESS OF THEIR FIRST VENUE IN THE ALTERNATIVE neighbourhood of Malasaña, Nick Paredes and his team have moved to a new space on Huertas Street, at the heart of what has become Madrid’s cocktail district. The revamped hifi bar is much larger and comfortable, providing the perfect setting to enjoy the best international indie-rock music spun on the bar’s turntable while sipping on the drinks of a new, more ambitious cocktail menu. The overall mood remains however unchanged: music, analog photographs –like those illustrating this text— and drinks inspired by international songs or bands.
A bar with gothic aesthetics and rock music where a differential social atmosphere is created. In the bar and lounge, a team of three professionals led by Alberto Villaroel, veteran in the industry (1862 Dry Bar) and alma mater of the project, transfer to Santos y Desamparados their "dark bar" concept: "The professionalism and absence of theatricality in the service contrasts with the baroque elements of the decor and ambience".
A former whorehouse the current premises of Santamaría (Calle de la Ballesta 6, Madrid), a cocktail bar with history in the heart of Madrid - between the Telefónica Building and Plaza de Callao - which for the second year in a row remains on the list of the best cocktail bars in Spain and Portugal according to Top Cocktail Bars. Its signature cocktails, made using advanced techniques such as enzyme clarification, are delicate and minimalist on the outside but concentrated in aroma and flavor.
BAR LLAMA, located on the ground floor of C. del Conde
de Xiquena 2 (28004 Madrid) pays tribute to New York and Peru through its cocktail menu and its selection of bar food. It logically follows in the footsteps of the successful Llama Inn in Brooklyn, where the cuisine riffs on the diversity of Latin American culture (Amazonian, Andean, Creole, Nikkei, Northern, Chifa and Bachiche)

Apple to the Las Salesas neighborhood and Natasha Bermúdez, bar manager of the Llama group, adapts her New York cocktails
to the Madrid palate without losing their Latin inspiration. At Bar Llama, the public can easily identify with twists on beloved classics such as the Paloma, Margarita or Daiquiri.
For The Madrid Edition and The Barcelona Edition hotels we are consultants focused on their beverage programs. Our work with them has a lot to do with how they communicate their cocktail outlets and the varied offers they provide. To do this we work hand in hand with the F&B departments, Brand International and local communication agencies to approach beverage communication in the most professional and truthful way possible. We offer a great tool that complements these agencies. At the same time we organize specialized press events.
We have started working with The Fish & Chips Shop group -from Barcelona- in order to launch their new restaurant in Madrid. Communication, PR, image (photography sessions included) and consultancy on the implementation of the concept in Madrid.
For Only You hotels we worked on the development of a cocktail program during the year 2020 with training of the bar and dining room staff. For this, we also came up with the art direction and image of the cocktails, as well as the creation of the concept and narrative: a mystery story in which agent Ms. Black follows Ms. 7 –the woman who inspires the cocktails for two centuries as a result of her time travels– through space and time. A bartender, Mr. White, has the decisive clue to find her hidden in the cocktails of his menu.
